Sautéed Kale and Parsnips

5 cups rough chopped kale
2 parsnips peeled and sliced
2 cloves sliced garlic
1 tbsp melted coconut oil
1/2 tbsp olive oil
Sea salt and freshly ground pepper

Heat olive oil to medium temperature in a large skillet. Cook parsnips until lightly browned. Add kale and garlic and sauté until kale is tender. Season to taste with salt and pepper. Drizzle with melted coconut oil. Enjoy!
